Carb-Craving or “desire-carbohydrate addiction” is a kind of irresistible hunger, a growing desire for foods rich in simple carbohydrates (sugars), especially snacks, sweets or food “junk”, most of the time due to the fact that these help us temporarily relieve our negative emotions and can be a refuge to our problems. 

“Carb-Craving” is linked to the ratio of carbohydrates, insulin and appetite: a carbohydrate intake triggers the increase of insulin levels and, consequently, a reduction of the sugar levels circulating in the blood and this causes a desire (or craving) of additional food.

In addition, they also produce higher levels of chemical serotonin in the brain, so in sensitive people, especially those with low serotonin levels, eating carbohydrates is equivalent to taking a large amount of serotonin. 

Our metabolism is not able to tolerate such violent stimulations and therefore loses its natural qualities of self-regulation. 

The pancreas begins to produce excessive amounts of insulin and increases the chances that this insulin becomes less and less effective by creating a vicious circle that is called insulin resistance and that is the preamble of diabetes. 

This altered mechanism also excessively stimulates appetite and contributes to worsening our physical and mental performance.

Stress negatively affects the efforts we make when we are on a diet because it not only increases the desire for carbohydrates but also causes an increase in cortisol levels that in turn stimulates insulin, which leads to sudden drops in sugar and fat storage: a vicious mechanism that feeds itself and can create addiction!!
